Indian Monsoon Malabar is famous for its deep flavour created by exposure to the warm and humid monsoon breeze. Sun dried green coffee is stored in coastal open sided warehouses to let it absorb moisture from the moist tropical air blown through by the monsoon winds. This process was set up to replicate the original treatment of the beans on their journey back to Britain in wooden sailing ships during colonial times. The long journey at sea caused the beans to swell and age, giving the beans a deep spiciness and lowering acidity. We say its a bold and satisfying cup of coffee.
